October R.O.M. Pumpkin Turkey Meatloaf

This fall themed recipe is finger licking good and PERFECT to kick the fall off! We are pretty sure this will be a new favorite!!!


1 1/4 1b. ground turkey
4 slices bacon (chopped)
2 eggs
285g (~10 oz.) pumpkin or sweet potato
1 medium red bell pepper chopped
3 garlic cloves minced
6 oz. organic tomato sauce
2 Tbsp. raw agave nectar
1.5 tsp salt
2 tsp. black pepper
1 tsp. garlic powder
1 tsp. onion powder

In a medium saucepan sautée garlic, red bell pepper and bacon. Set asidePUMPKIN MEATLOAF
In a small bowl mix tomato sauce, 2 Tbsp. agave nectar and 1 tsp. black pepper. season to taste.
In a large bowl thoroughly mix, pumpkin, ground turkey, eggs, salt, 1 tsp. black pepper, onion powder, garlic powder, sautéed mixture and 1/2 of tomato sauce.
transfer and shape mixture in a 9×5 loaf pan
Evenly coat the top of loaf with the remainder of tomato sauce mixture using a basting brush or back of spoon
bake for 1hr to 1hr and 15 min or until internal temperature reaches 165.
Let cool for 10 min. Slice and enjoy! Serve with a side of veggies! Taste great with cauliflower mashed potatoes!
