R.O.M. December: Slow Cooker Sweet Potato & Chicken Delight

A CLEAN & DELICIOUS super easy to make slow-cooker recipe that’s perfect year round especially during Fall & Winter! Pair with your favorite serving of steamed green veggies for a complete delicious and balanced meal! It’s packed full of vitamin A (100% of your daily needs to be exact), vitamin C and potassium!  It will definitely make your taste buds dance! This is a hit and a favorite in the Callins residence. Serving Size: 6

Ingredients:

6 Chickenbreast (4-oz.) boneless, skinlesscut in strips

3 medium sweet potatoes skinned and cubed

1 tsp. Pepper, black

1 tsp. Pepper, red or cayenne

1 tsp. Paprika

1 tsp. Curry powder

1 tsp.  Ginger, ground

1 tsp.  Garlic powder

1 cupChopped onion

2 clovesMinced garlic

1/2 cup Vinegar, balsamic

3 tbsp. Vinegar, cider

1/2 cuplow sodium chicken broth

Directions:

1. Cut chicken in to strips and sprinkle with black pepper, cayenne pepper, paprika, curry powder, ginger andgarlic powder.

2. Place sweet potatoes onions andgarlic cloves in a 3 1/2 quart slow cooker and top with chicken.

3. Top with vinegar and chicken broth. Stir and mix well.

4. Cover and cook for 6-8 hours or until sweet potatoes are tender when pierced with fork
